Mayocoba Bean Bowl with Cheezy Green Chile Polenta

Dinner last night was a bean bowl with cheezy green chile polenta and a side of homemade salsa and baked corn chips.




This was my creation from start to finish. The bowl starts with a nice layer of greens ( spinach, kale, and arugula), topped with my own recipe for cheezy green chile polenta, mayocoba beans, diced tomatoes, onions, pickled jalapeños, pickled cactus, sliced avocado, and cilantro. 

The salsa and chips are both homemade as well.
