Vegan Tikka Masala.
Marinated, baked, and sautéed tofu mixed in a creamy and spicy tomato sauce. I took some liberties with a chicken version of this recipe and I was extremely pleased with the outcome. I substituted a block of extra firm tofu for the chicken and cashew cream for both the yogurt and heavy cream called for in the original recipe (equal amounts). I also baked the tofu and then pan seared it for a crispier coating rather than adding it straight to the sauce after baking. I then followed the rest of the recipe as written… almost. The secret was adding lots of extra ginger and garlic.
